I was thinking about an idea called "grey goo" the idea consist of a matter or material that "eats" earth and surrounding land, converting into more goo

Now my question is, this can be plausible? Making a new type of material and modifing the engine to handle that material like a gelatinous thing, and where the clonks sould fight it with bombs and lava?

Such a material should be fairly easy to implement with some engine changes
